Our apple barrel gin is the result of a meticulous and patient process that began with our quince-macerated dry gin. To elevate the mouthfeel, we blended in a touch of apple spirit, creating a unique and balanced base. But the true magic happened when this blend was introduced to a barrel that had previously nurtured our apple brandy for five years.
As the gin rested in this seasoned barrel, it developed a mellow complexity that deepened with time. We let it mature undisturbed for 23 months, allowing the flavours to harmonise beautifully. The result is the apple barrel gin, its subtle, has “gin-ness”, but a bit more body and tantalising hints of barrel character that give an extra length. This gin is a rare expression of craftsmanship and patience, offering a one-of-a-kind tasting experience.
